Kerala Paratha recipe

Malabar Paratha

Preparation time : 1 hour 45 minutes

Kerala parotta is a crispy, flaky unleavened layered flat cahpati or bread from kerala.

Ingredients to prepare Kerala Paratha recipe :

Whole wheat flour/atta 1/2 cup
All purpose flour/maida 1/2 cup
Oil 1 table spoon
Baking soda ΒΌ tea spoon
Hot water 1/2 cup
Sugar 1 tea spoon
Salt as required

Kerala Paratha preparation method :

Take both the whole wheat flour and all purpose flour and seive. Add baking soda, sugar, salt, oil and hot water.

First mix with a spoon and then knead the dough till soft to make a smooth dough. cover with a moist cloth and keep aside for 1 hour.

Divide the dough into 3-4 balls, dust the surface with flour and roll each ball as thinly as possible into a large circle. Apply oil on the entire surface of the rolled dough.

Hold the rolled disc from the top on both sides and pleat them till bottom.Now roll them like a spiral and press the last edge onto the center of the roll.

Make all the spiralled balls this way and cover with wet cloth and keep aside for 15 minutes.

Heat tava, take each rolled ball and on a dusted surface, roll each ball into a paratha of 4-5 inches.

Place the paratha on the tava and fry on both sides with oil drizzled on top and the edges till the parathas are crisp and golden.

Now the Kerala Parathas are ready to serve.

Serve the kerala parathas with any indian vegetable or lentil curry or dal.
