Coriander Rice Recipe

Cilantro Rice

Kothamalli sadam

Preparation Time : 45 minutes

Coriander rice is aromatic, spiced rice made with fresh coriander, spices and vegetables.

Ingredients  to prepare Coriander Rice :

Main ingredients:  
Basmati rice  2 cup
Onion  2 medium size
Potato  2 medium
Green peas  ¼ cup
Tej patta  2
Cloves / lavang  3 to 4
Black peppers  5 to 6
Dal chini  1 inch
Choti elaichi  3
Turmeric powder  a pinch
Oil  4 table spoons
Water  3 cups
Salt  to taste
For the coriander paste:  
Chopped coriander leaves  1 cup
Green chillies  4 to 5
Ginger  1 inch
Grated coconut  4 table spoons
Garlic  3 to 4 medium
Cumin seeds/jeera 1 tea spoon
Fennel seeds/saunf  ½ tea spoon
Oil  4 table spoons

Wash and soak the rice in water for half an hour.

Grind chopped coriander leaves, green chilies, ginger, coconut, garlic, cumin seeds/jeera and fennel seeds / saunf in a small grinder or chutney grinder to make a smooth paste by adding little water.

Heat oil in a pressure cooker and add cloves, black peppers, cinnamon, and elaichi and  saute for few seconds.

Add thinly sliced onions and saute the onions till they become golden. keep on stirring often so that the onions have a uniform golden color and do not get burnt.

Lower the flame now and add the ground coriander paste, turmeric powder and mix well. Now add chopped potatoes and green peas.

Then drain the water from rice and add. Stir gently and saute the rice for a minute. Add water and salt, cover and pressure cook for 2 whistles on a medium to high flame.

When the pressure settles down on its own, remove the lid and gently mix and serve.

Now Kothimira rice or Kothamalli sadam is ready to serve

Serve coriander rice with raita and salad.
