During Dassera Navratri festival which marks the onset of autumn is celebrated with different varieties of recipes all over India. Dussera Navrathri festival is celebrated from the first to ninth date of Ashwin Shukla Paksha of the Hindu calendar for the worship of Goddess Durga. This festival is celebrated with full of dance and music for ten days. Most famous recipes of Dussera Navrathri festival are coconut laddoos, payash, bundi sweets. The Indian recipes are famous for their variety.

During Dussera Navrathri festival in most of the communities, people observe fast and eat only one meal a day at sunset with special courses and is strictly vegetarian. Even onion and garlic are not allowed due to their foul smell. Specific ingredients and vegetables are used that may vary from region to region. Spices like red chilies, turmeric and cumin seeds are restricted to take and only rock salt is used. However, one can eat milk, curd, fruits and nuts.

As there are numerous festival in India, each and every festival is  incomplete without delicious food. Since Dussera is a long festival celebrated for ten days a large variety of dishes are made and served during this festival.

Then people who observed fast take blessings of the young girls (kanchikayen) and break their fast.

Pudina Rice Recipe


Ingredients To Prepare Pudina Rice

 

6 cups rice

6 cups pudina (mint) leaves

8 green chillies

2 onions

Salt to taste

Chilli powder to taste

Ginger garlic paste 2 tsp

2 Lemon

8 cinnamons

4 Biryani leaves

Ghee 2/6cup

Cashew nuts 2/6 cup.

Pudina Rice Making Procedure

Wash the rice cleanly and cook it. Later take the cooked rice to separate plate and let it dry. After drying mix salt as per taste and put it aside. Now add mint leaves and green chillies in a mixer and grind it. Later pour ghee in a pan and fry cashew nuts in the pan. Later add biryani leaves, cinnamons, and grated onion and fry them all. Now add pudina paste, ginger garlic paste and chilli powder in the pan and fry them all together. Fry the mixture for five minutes and later add the cooked rice to the mixture. After the rice gets heated add lemon juice to it and turn of the flame. Now Tasty Pudina rice is ready to have with your favorite curries, sambar or with Chatney.

OATS PAYASAM RECIPE

Do you want to prepare Oats Payasam, then read this Recipe to prepare excellent sweet dish.

Oats helps to gain more proteins and nutrients necessary for our Body.

Ingredients for Oats Payasam

Oats – 4 cups
Milk – 8 cups
Ghee – 4 tsp
Kaju – 50 Nos.
Kismiss – 30 Nos.
Badam – 40 Nos.
Elaichi – 4 Nos.
Sugar – 4 cups (or According to your Taste)

Process for Preparing Oats Payasam

Put a bowl on the stove and switch on the stove. Put 8 cups of milk. Allow it to boil, when it starts boiling put the oats in the milk. Allow it cook for 3 minutes. Mean while take 20 Nos. of kaju and 20 Nos. of Badam and 3 Nos. of elaichi and put them in mixie and put a little quantity of water. Make it as a paste. Now put this paste into the boiling milk and oats. Allow it to cook for another 3 minutes. Now put 4 cups of sugar and stir it so that the sugar gets melted quickly. Allow it to cook for five minutes. Put the flame off. Now, the payasam is ready. Now, take a small bowl and put the ghee of 4 tsp and allow it to warm up, and put the balance of badam, kaju and kismiss. Allow it turn into brown. Then mix this with the payasam and serve it hot. If you like a cold Payasam, Keep it in a freezer for 1 to 2 hours.
