Baby Potato Fry Recipe

Ingredients to prepare Baby potato curry :

Baby Potatoes

¼ kg


3 table spoons

Fresh Curd / Yogurt

1/4 cup

Red Chilli Powder

1 tea spoon

Black Pepper Powder

½ tea spoon

Garam Masala Powder

½ tea spoon

Jeera Powder

½ tea spoon

Dhaniya Powder

½ tea spoon

Turmeric Powder

¼ tea spoon

Kashmiri Chilli Powder

1/2 tea spoon (optional)

Coriander leaves

for garnish (optional)

Ginger Garlic Paste

1 tea spoon

Kasuri methi

¼ tea spoon

Baby Potato Curry preparation method :

Wash the Baby Potatoes; prick them with the help of knife or fork. Pressure cook with water for 3-4 whistles.

Once the pressure eases remove and peel off the skin.

For Marinating first take all the ingredients – curd, ginger garlic paste, red chilli powder, black pepper powder, garam masala, jeera powder, dhaniya powder, turmeric powder, Kashmir chilli powder, kasturi methi and salt.

Mix it well with the help of whisk so that all the ingredients blend well. Now add the cooked Baby Potatoes and mix well once and refrigerate it for 3 hours.

After 3 hours to make curry heat Oil in a flat pan and add the Marinated Potatoes with the Curd mixture and cook over high flame for about 5 minutes. When the ingredients start to thicken separating the Oil simmer the flame now and let it cook for 15-20 minutes.

Check once in a while and stir slowly with the help of a spatula taking care not to break the Baby Potatoes.

Cook till the gravy part would have dried up and the Baby Potatoes being well coated.

Finally garnish with Coriander Leaves. Serve Baby Potato Curry or Fry with plain Rice or with Chapati.
